Caramel Popcorn

Caramel Corn

Quite a few years ago, while I was teaching Home Economics, the English teacher’s wife gave me a recipe for Caramel Corn and I have been using it ever since. When I make it I usually just  use popcorn but sometimes I add Rice Chex. You can add nuts or other Chex cereals as well, just keep in mind to have the dry ingredients in proportion to the sauce.

2 cubes   butter – (not margarine)
2 c.   brown sugar
1/2 c.   corn syrup
dash   salt
1 t.   vanilla
1/2 t.   soda
3/4 c. unpopped popcorn

Microwave Popcorn

Start by popping 1/4 c. popcorn in a microwave popcorn popper. I make three poppers full for the amount of syrup indicated above.

After I pop one batch I use my Cajun Injector Batter Pro Batter Bowl to remove any unpopped kernels of corn.

When you have popped the 3/4 cup of popcorn place it in a non-stick roaster to be placed in a 200 degree oven to keep it warm until the caramel is ready to be poured on.

Combine the first four ingredients in a large saucepan.

Bring to a rolling boil stirring constantly. (I like using a Utensil Pot Clip to keep my spatula handy) Turn heat to low and let set for 5 minutes without stirring.

Remove from heat and add vanilla  and soda. Let foam while stirring.

Pour over warm popped corn and bake in oven at 200 degrees for 30 min. Stir and put back in oven for another 30 min.

Let cook and enjoy.
