Freezing Bacon

Just a quick tip for today: I can’t remember where I saw this – but I have been doing it for a few months now and just love it. When I bought bacon I  would freeze the whole package and then thaw it and either fry it all or refreeze what I didn’t use. I have also tried to freeze layers of bacon by putting a piece of parchment in-between ever two or three pieces – but when I read this tip I knew it was the answer to my freezing bacon problem:

Roll each piece of bacon and freeze on a cookie sheet lined with a Silpat then place it in a zip-lock bag, sealed with a bag sealer then place it back in the freezer.

This way you can take out  as many pieces as you need for the number of people you are serving or the amount needed for a recipe. When you are ready to use it remove from the freezer and place it on defrosting tray  to quicken the thawing process while you get the rest of the things measured and ready for your recipe or your meal.
