Guacamole

After years of trying different Guacamole recipes I have settled on this one. It is a good basic recipe that goes well with things like Huevos Rancheros, but also as a dip for Tortilla Chips. I am allergic to raw onions, so I never add them to anything I make; but of course, if you like them – add them! The same applies to cilantro. I’m not allergic to cilantro, I just don’t like it very much!

Guacamole

1 avocado, peeled and seeded
1 T fresh lime juice
2 T chopped canned green chiles
1/2 cup chopped tomato, which has been peeled and seeded
2 T mayonnaise
1/2 t salt
1/8 t garlic powder
4 drops hot pepper sauce

After you peel the avocado and take the seed out (be sure and save the seed) put the halves through a Potato Ricer. This makes a nice smooth paste and also removes any strings that are in the avocado.  Add the lime juice to the avocado paste. In small bowl, combine avocado mixture, green chiles, tomato, mayonnaise, salt, garlic powder and hot pepper sauce. Cover and chill 1 hour. (Store the saved avocado pit in the bowl to prevent the Guacamole from browning.)
